When I used to commute 45 minutes to work, I rarely had time to eat breakfast. In fact, between driving to catch the train and then walking several blocks to work, I usually picked up a breakfast sandwich along the way. Needless to say, it wasn’t the healthiest thing to eat but when you’re starving and crunched for time, it looks really good. Breakfast is important because it essentially “breaks” a “fast”. After sleeping all night, your body is ready for some nourishment and a donut or muffin isn’t ideal.
Here are some quick breakfast tips for those of us who are on the go.
Instant oatmeal – These are easy to buy but try to avoid the ones loaded with sugar. There are plain, instant oatmeal options available that require nothing more than a bowl, water, and a microwave. You can devote at least 2 minutes of your morning to preparing it, top it with some berries, and eat it before rushing out. Even easier, take it to work and prepare it there.
Eggs, spinach, and salsa – This won’t require a frying pan. All you need is a microwave safe container. Scramble up some eggs or egg substitute into the container, add a bit of frozen spinach, and microwave until cooked. Top it with some store bought salsa and go!
Omelette in a bag – Super easy and can be prepped the night before. Scramble some eggs and pour into a ziplock bag. Chop up some veggies or whatever you like in your omelette and add to the eggs. Zip it up and refrigerate. In the morning boil a small pot of water, drop in your ziplock bag containing your egg mixture and let it cook. Instant omelette, fast and easy. Careful when opening the bag.
